Ingredients
1 cup rotini pasta​
2 tbsp red onions​
1/2 cup cucumber​
1/2 cup bell peppers​
1 tbsp kalamata olives​
1 cup grape tomatoes​
1 tsp parsley​
1/2 cup canned chickpeas
Salad dressing:​
4 tbsp olive oil​
4 tbsp red wine vinegar​
1/3 cup tomato sauce​
1 tbsp lemon juice​
2 tsp oregano​
1 tbsp chopped basil​
1/2 tsp salt and pepper
Directions
- Fill a large pot with water and bring to boil. Stir in the pasta and cook until firm. Cool it down.​
- Dice red onion, cucumber and bell pepper.​
- Slice kalamata olives.​
- Cut grape tomatoes into half.​
- Chop parsley.​
- In a bowl, mix olive oil, vinegar, tomato sauce, lemon juice, oregano and basil together. Season with salt and pepper and adjust per taste. ​
- Mix pasta, vegetables, chickpeas and dressing together.
